Standard carriage bolts have a round head with a square collar and are tightened into place with a nut and wrench.  The collar fits into a pre-bored hole or twists into the wood, preventing the bolt from turning as the nut is tightened.  They are coarse-threaded and are available in a wide range of diameters and lengths in various grades of steel and stainless steel.
